Premium Fresh Razor Clam Meat

Razor clams opened out and trimmed — long, narrow bodies of firm pale meat with a bright band of orange roe running through them. The shape gives them away: nobody mistakes a razor clam for anything else.

They are sweet and clean-tasting with a firm, almost crunchy bite, and they take heat well without turning tough. Steam them with garlic and vermicelli, drop them into a hotpot for a minute, or stir-fry fast over the highest flame you have.
